Ingredients:

  • 500 g fresh sardines, gutted and filleted
    100 g breadcrumbs
    50 g grated parmesan
    2 tablespoons chopped fresh parsley
    2 cloves garlic, finely chopped
    1 tablespoon capers, chopped
    8-10 pitted black olives, chopped (optional)
    1 egg
    Flour to taste (for dusting)
    Seed oil (for frying)
    Salt and pepper to taste
