Baklava Bundt Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plain Greek yogurt
  • 1/2 cup chopped walnuts or pistachios

For the Honey Syrup:

  • 1/2 cup honey
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 cinnamon stick
  • 1 teaspoon lemon juice

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt, and mix until just combined.
  6. Fold in the chopped nuts until evenly distributed throughout the batter.
  7. Pour the batter into the prepared bundt cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. While the cake is baking, prepare the honey syrup. In a small saucepan, combine the honey, granulated sugar, water, cinnamon stick, and lemon juice. Bring to a boil over medium heat, then reduce the heat to low and simmer for 5 minutes. Remove from heat and let cool slightly.
  10. When the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Invert the cake onto a wire rack set over a baking sheet.
  11. Remove the cinnamon stick from the honey syrup, then slowly pour the syrup over the warm cake, allowing it to soak in and absorb the flavors.
  12. Let the cake cool completely before slicing and serving.
