carne guisada with floor tortillas !!

Ingredients:
For the carne guisada:

2 pounds stew meat (beef), bite-sized pieces

2 tablespoons vegetable oil

1 onion, diced

3 cloves garlic, minced

1 bell pepper, chopped

1 can (14.5 oz) diced tomatoes

1 cup beef broth

2 tablespoons all-purpose flour

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste,

Fresh cilantro, chopped (for garnish)

Flour Tortillas:

2 cups all-purpose flour,

1 teaspoon baking powder,

½ teaspoon salt,

¾ cup warm water,

2 tablespoons vegetable oil

Instructions:

Heat vegetable oil in a big frying pan over medium-high heat. Rub some salt and pepper on the beef stew meat.
Brown meat until its colour is well changed in batches. Transfer the browned meat into a huge pot.

Put onions, garlics and bell peppers into the same skillet at once. Saute them until they become soft and fragrant for about five minutes.

Dust the flour on top of vegetables and stir to coat it evenly. Cook for 1-2 minutes to eliminate any taste of raw flour.

Combine diced tomatoes with beef broth, stirring continuously. Add chili powder, cumin, paprika, salt and pepper; mix all together. Let it boil till bubbling hot.

Pour large amounts of this concoction over browned pieces of meat that are already in a saucepan. Now place a lid on it then simmer under low heat for about one hour thirty minutes or two hours up to when it gets tender as well as sauce turns thick. You can sometimes give little stirs during cooking process.

Prepare flour tortillas: In a bowl whisk together all-purpose flour, baking powder and salt; add warm water and vegetable oil slowly while mixing until dough forms.

Place dough onto lightly floured surface; knead until smooth (for few minutes). Now divide dough into uniform pieces (eight balls).
On a surface where flour has been sprinkled, roll out the dough balls thinly into circles that are approximately eight inches across.

Over medium high heat, heat up a dry frying pan. Cook each tortilla for about one minute on each side until they are brown and cooked through. Keep these warm in a neat kitchen towel while awaiting the cooking of others.

Carne guisada serving: Spoon them over warm flour tortillas with tender beef and flavorful gravy. To garnish chop up some cilantro fresh leaves. This Carne Guisada can be served hot and enjoyed with Flour Tortillas!
