Step 1: Preheat the Oven
- Heat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with a little oil.
Step 2: Soak the Breadcrumbs
- Soak breadcrumbs: In a small bowl, combine the breadcrumbs and milk. Let them soak for about 5 minutes.
Step 3: Prepare the Meatloaf Mixture
- Mix ingredients: In a large bowl, combine the ground beef, soaked breadcrumbs, chopped onion, garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme. Mix thoroughly until well combined.
- Form the meatloaf: Shape the meat mixture into a loaf and place it in the prepared baking dish.
Step 4: Prepare the Topping
- Make the topping: In a small bowl, mix together the ketchup, brown sugar, and a splash of Dijon mustard (if desired). Spread this mixture over the top of the meatloaf.
Step 5: Bake the Meatloaf
- Bake: Cook in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
Step 6: Prepare the Mashed Potatoes
- Cook potatoes: While the meatloaf is baking, place the diced potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until the potatoes are tender.
- Mash potatoes: Drain the water and return the potatoes to the pot. Add milk and butter, then mash until smooth. Season with salt and pepper to taste.
Step 7: Combine and Broil
- Top with mashed potatoes: Once the meatloaf is done, spread the prepared mashed potatoes over the top.
- Add cheese: Sprinkle the grated cheddar cheese over the mashed potatoes.
- Broil: Place under the broiler for 3-5 minutes, or until the cheese is melted and bubbly.
Step 8: Serve
- Rest and garnish: Allow the meatloaf to sit for about 10 minutes before slicing. Garnish with chopped parsley.
