Cheesy Penne with Cherry Tomatoes, Spinach, and Broccoli: A Burst of Flavor and Nutrients
Ingredients:
Chickpea penne
Cherry tomatoes
Spinach
Onions
Broccoli
Plant-based ricotta
Olive oil
Minced garlic
Salt and pepper.
Directions:
Steam Vegetables: Begin by steaming the cherry tomatoes, onions, and spinach in a pan with a splash of water. Cook until tender.
Sauté with Garlic: Once the vegetables are tender, add olive oil and minced garlic to the pan. Sauté until fragrant and golden brown.
Cook Penne: While the vegetables are cooking, prepare the chickpea penne according to the package instructions. Once cooked, drain the pasta, reserving about 1/3 to 1/2 cup of the pasta water.
Combine Ingredients: Add the cooked penne to the pan with the sautéed vegetables. Lower the heat to a simmer.
