CHERRY BARS FOR A CROWD

° 1 12 cups soft butter

° 3 cups granulated sugar

° 1 1/2 teaspoon salt

° 5 large eggs

° 1 1/2 tsp vanilla extract

° 1 1/2 teaspoons almond extract

° 5 1/2 cups all-purpose flour

° 1 1/2 tsp baking powder

° 2 cans (21 ounces) cherry pie filling

+For glazing:

° 1 cup confectioners’ sugar

° 3 tablespoons milk

* directions :

Preheat oven 350 degrees F . Line a jelly roll tray (12 x 17) with aluminum foil. Spray with non-stick spray. Sit aside.

In the bowl of a stand mixer, beat the butter and sugar together for 1-2 minutes. Add salt, eggs, vanilla and almond flavors and continue stirring until fully combined. Add flour and baking powder and mix until combined. Reserve 1 3/4 cups of dough. Stretch / press the remaining dough into the prepared baking tray. Top with cherry pie filling. Drop the rest of the mixture in small pieces over the cherry filling.

Place in the oven and bake for 50-60 minutes or until golden brown. Remove from the oven and place on a wire rack to cool completely. Once it cools, prepare the glaze. Whisk together the confectioners’ sugar and milk until smooth and sprinkle onto plates. Cut into 35 squares and serve.
