Cod in a Tomato Lemon Butter Sauce
Instructions
- Prepare the Cod:
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Once hot, add the cod fillets and cook for about 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the cod from the skillet and set aside.
- Make the Sauce:
- In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
- Stir in the diced tomatoes (with their juices), capers, lemon zest, lemon juice, and oregano. Season with salt and pepper to taste. Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Combine:
- Return the cooked cod fillets to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes, just to heat the cod through and allow it to absorb some of the sauce.
- Serve:
- Plate the cod and drizzle with the tomato lemon butter sauce. Garnish with fresh parsley or basil. Serve immediately with your choice of sides, such as rice, quinoa, or a fresh salad.
