Easy Slow Cooker Rotisserie Chicken Recipe

Instructions:

1. Prepare Your Slow Cooker: Lightly coat the inside of your slow cooker with cooking spray. Create a makeshift rack by rolling four balls of aluminum foil and placing them at the bottom. This setup allows the chicken to cook elevated, keeping it juicy and tender as it avoids sitting in the juices.

2. Get the Chicken Ready: Remove the neck and giblets from the chicken. Rinse the chicken under cold water and pat it dry thoroughly with paper towels.

3. Season the Chicken: Mix together the salt, pepper, chili powder, smoked paprika, garlic powder, dried parsley, and dried thyme in a small bowl. Rub this seasoning blend all over the chicken, making sure it’s evenly coated for a deep, rich flavor.

4. Cook: Set the seasoned chicken on top of the aluminum foil balls in the slow cooker. Cover and cook on low for 7-7.5 hours or on high for 4-4.5 hours, until the chicken reaches an internal temperature of 165°F and is fully cooked.

5. Careful Handling: Remove the chicken carefully from the slow cooker, as it will be very tender and may fall apart easily.

6. Optional Crisping: If you prefer crispy skin, transfer the chicken to a baking sheet and broil it in the oven for 3-5 minutes, or until the skin is golden and crispy.
