Instructions for Making Hearty Lentil Bolognese
Step 1: Cook the Lentils
Place the lentils in a pot with 3 cups of water. Bring to a boil, then reduce heat to a simmer.
Let the lentils cook for 15–20 minutes or until they’re tender but still hold their shape. Drain and set aside.
Step 2: Sauté the Vegetables
In a large pot or skillet, heat the olive oil over medium heat.
Add the onion, carrots, celery, and bell pepper. Cook for 5–7 minutes until the vegetables are soft.
Add the garlic and cook for an additional 1 minute, until fragrant.
Step 3: Add the Tomatoes and Seasoning
Stir in the tomato paste, crushed tomatoes, and vegetable broth.
Add the red wine (if using), oregano, basil, thyme, salt, and black pepper. Mix well to combine.
Step 4: Simmer the Sauce
Bring the sauce to a simmer and let it cook for 20–25 minutes on low heat. Stir occasionally and add more broth if the sauce becomes too thick.
Once the sauce has reduced and thickened, stir in the cooked lentils and adjust seasonings as needed. If you like a bit of heat, add the red pepper flakes.
Step 5: Serve
Spoon the Bolognese over your favorite pasta, like spaghetti or penne, and sprinkle with fresh basil, parsley, or Vegan Parmesan cheese.
Serve hot and enjoy!
