Directions:
Prepare the Chicken:
Preheat your oven to 180°C (355°F).
Season the chicken legs with salt, ground black pepper, and your favorite chicken spices.
Heat some vegetable oil in a large frying pan over medium heat. Sear the chicken legs until they are golden brown on all sides. Set aside.
Prepare the Vegetables:
In a large bowl, combine the chopped potatoes, onion, and carrot. Drizzle with vegetable oil, and season with salt and ground black pepper. Toss to coat the vegetables evenly.
Make the Glaze:
In a small bowl, mix together the honey, soy sauce, chili sauce, mustard, and minced garlic.
Assemble and Bake:
Place the seared chicken legs on a baking sheet or in a baking dish.
Arrange the seasoned vegetables around the chicken.
Brush the chicken legs generously with the honey soy glaze.
Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
Serve:
Remove from the oven and let it rest for a few minutes before serving.
Serve the chicken legs with the roasted vegetables, drizzling any remaining glaze over the top.
