Prepare the Zucchini: Cut the zucchinis into half-moon slices or matchstick pieces.
Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
Cook the Garlic: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
Add Zucchini: Add the sliced zucchinis to the skillet. Stir-fry for about 3-4 minutes until they start to soften.
Season: Add the soy sauce, gochujang, sesame oil, and sugar (if using). Stir well to coat the zucchini evenly with the sauce.
Cook Until Tender: Continue to cook for another 2-3 minutes until the zucchinis are tender but still slightly crisp.
Finish with Sesame Seeds: Sprinkle the sesame seeds over the zucchini and give it a final stir.
Garnish and Serve: Garnish with chopped green onions if desired and serve hot as a side dish.
