Instructions:
1. Prepare the Crust:
Preheat your oven to 325°F (163°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
Press the mixture into the bottom of a 9×9-inch baking dish or an 8×8-inch square pan to form an even layer.
Bake for 10 minutes. Remove from the oven and set aside to cool.
2. Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth.
Add sugar and vanilla extract, mixing until well combined.
Add eggs one at a time, mixing on low speed after each addition. Be careful not to overmix.
Stir in sour cream until fully combined.
Pour the cheesecake filling over the cooled crust and spread it evenly.
3. Bake the Cheesecake:
Bake in the preheated oven for 30-35 minutes, or until the center is set but still has a slight jiggle.
Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool slowly. This helps prevent cracking.
Remove from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours or overnight.
4. Prepare the Strawberry Crunch Topping:
In a small bowl, combine the strawberry cereal with melted butter and granulated sugar. Mix until the cereal is coated.
Spread the mixture on a baking sheet and bake at 350°F (175°C) for 5-7 minutes until slightly golden. Allow to cool.
5. Assemble the Cheesecake Bites:
Once the cheesecake is fully chilled, top with diced strawberries and drizzle with strawberry glaze.
Sprinkle the strawberry crunch topping over the top.
Cut into squares or bites and serve.
6. Enjoy:
These delightful strawberry crunch cheesecake bites are perfect for parties or as a sweet treat!
