Stuff each pocket with 2 slices of fresh mozzarella, 2 slices of Genoa salami, 2 slices of pepperoni, and 2 slices of hard salami.
Secure with Toothpicks:
Secure the stuffed chicken breasts with toothpicks to prevent the stuffing from falling out during cooking.
Sear the Chicken:
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until they develop a golden-brown crust.
Add Sauce and Cheese:
Pour marinara sauce over the stuffed chicken breasts in the skillet. Sprinkle the shredded Italian cheese blend over the top.
Bake in the Oven:
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through, and the cheese is melted and bubbly.
Top with Pepperoni:
In the last 5 minutes of baking, arrange sliced pepperoni on top of each stuffed chicken breast for an extra flavorful and crispy topping.
Serve:
Carefully remove toothpicks before serving. Garnish with fresh basil or parsley if desired.
