Step 1: Prepare the Dough
- In a large mixing bowl, combine the masa harina and salt.
- Gradually add warm water, mixing until the dough reaches a soft, pliable consistency. It should be slightly moist but not sticky.
- Cover the dough with a damp cloth to keep it from drying out while preparing the fillings.
Step 2: Prepare the Fillings
- If using beans, mash them into a smooth paste.
- For pork or vegetables, finely grind or chop them to ensure they fit easily inside the pupusa.
- For cheese, shred or crumble it into small, manageable pieces.
Step 3: Make the Curtido
- In a bowl, combine the shredded cabbage, grated carrot, and sliced onion.
- In a saucepan, heat the vinegar, salt, oregano, and a cup of water until just simmering.
- Pour the hot mixture over the vegetables and let it sit for at least 30 minutes. For best results, prepare curtido a day in advance.
Step 4: Cook the Tomato Sauce
- Heat the oil in a pan over medium heat.
- Sauté the onions and garlic until fragrant.
- Add the chopped tomatoes and cumin, cooking until the mixture softens and becomes saucy.
- Blend the mixture into a smooth sauce and season with salt and pepper.
Step 5: Assemble the Pupusas
- Divide the masa dough into small balls, about the size of a golf ball.
- Flatten each ball into a disc using your palms or a tortilla press.
- Place a tablespoon of your chosen filling in the center of the disc.
- Carefully fold the edges of the dough over the filling, sealing it completely. Flatten the filled dough gently into a thick patty.
